This one's so simple and pretty delicious! Of course, we stumbled upon this by accident, considering we were trying to make something out of almost nothing!
Saturday's Easy Dinner is......Spinach Tomato Pasta!
My sister loves pasta and I love to cook. We decided to make up a recipe that SOUNDED good but we had no idea how it would taste. We cooked a pot of penne rigate and added crushed tomatoes & canned spinach. Easy enough, but making it taste good took skill.....random skill.
We started with basil, agreeing that a spinach-tomato-basil combo would suffice. Having almost no taste, we added pepper, red pepper & garlic flakes, and then we brought out the Lousianna hot sauce! Almost there. It wasn't until we added a dash of Zatarains Creole Seasoning did it taste amazing. Probably not the best dinner but we had so much fun making it we enjoyed eating it!

Tonight I decided to make sweet & sour chicken with brown rice. So fancy, I know! -_- but I figured the simpler the better [way too much homework to get done too]. At first I thought I was being creative, until I discovered my exact recipe on the back of the minute rice box. So figure! Anywho here's the delicious recipe:
1Tbsp oil
1lb boneless skinless chicken breast, cut into bite-size pieces
2c frozen stir-fry vegetables
1 can (8 oz.) pineapple chunks in juice, undrained
.5c sweet and sour sauce
1c water
2c Minute® White Rice or Minute® Brown Rice, uncooked
1. HEAT oil in large skillet on medium-high heat. Add chicken; cook and stir 4 minutes or until cooked through.
2. ADD vegetables, pineapple with juice and sweet and sour sauce; mix well. Stir in water. Bring to boil.
3. STIR in rice; cover. Reduce heat to medium-low; simmer 5 minutes. Remove from heat. Let stand 5 minutes or until almost all of the liquid is absorbed and rice is tender.
